A La Minut

3-4 WEEK CONSULTING PERIOD

The A La Minut package is DonDari Culinary’s basic consulting package. This package is designed for established restaurants who may be working with a limited budget or are looking to increase revenues, introduce a new theme or simply to reach a larger target of consumers. Although this is the basic package — your staff, customers and restaurant’s environment are in for an exquisite finish. The package includes the following components :
 

MENU REVITALIZATION

    • Complete evaluation of current menu items
    • Introduce 3-4 new menu items based on inventory

STAFF DEVELOPMENT

    • Thorough briefing of staff in the areas of sanitation, kitchen operation and execution training

Mise en Place

6-8 WEEK CONSULTING PERIOD

Mise en Place is intended for restaurants that are under new management or are looking to expand into new culinary landscapes. This package is perfect for owners who are looking to amplify and perfect operations and bring short-term goals to fruition. In addition to Menu Revitalization and Staff Development; this package includes the following components :
 

FULL KITCHEN + SERVICE EVALUATION

    • Conduct full analysis on Point of Sale (POS) Systems, steps of service, expeditor performance + ticket wait times, vendor evaluation, sanitation procedures, safety assessment, food storage + rotation and inspection of cooking equipment.

GOAL + OBJECTIVE SESSIONS

    • Meet with management staff and owner to review evaluation and establish goals + objectives for improvement

STAFF IMPLEMENTATION

    • Meet with front of house and back of house staff to gather suggestions and troubleshooting of workspace

Al Dente

6-12 MONTH CONSULTING PERIOD / PRICE VARIES

The Al Dente is specifically for new establishments and those under new management. The DonDari staff will lead the way in everything from identifying cost-friendly food vendors to the marketing + branding of your new eatery. The price of this package is dependent on the scale and complexity of the project. The Al Dente package includes all of the aforementioned components as well as the following add-ons:
 

VENDOR ACQUISITION

    • Identify and initiate contact with vendors to ensure smooth launch of business (food, beverage, equipment/supplies, buildout contractors, etc.)

HEALTH + LOGISTICS

    • Set up systems and operations of restaurant, prepare and lead health department inspections, review of restaurant buildout and finalize all necessary permits and official document overview

MARKETING + BRANDING

    • Complete market assessment that will show prediction of establishment’s projected success
    • Create social media presence and unique menu design (Photography, Videography may be inquired about)

Á la Carte

The popular “sides” may be added into a previous package or hired as a standalone component. The prices of each of these services may vary depending on factors such as time of year, outside vendors and scale of project.
